The Ayla washing station is just south of Shantawane village and receives coffee from 725 organic coffee growers.
This washed-processed coffee undergoes depulping within 8 hours of picking, followed by a 36- to 48-hour fermentation in water, which removes mucilage from the parchment. After fermentation, it is fully washed until the water runs clear, ensuring all mucilage is gone. The coffee then dries on raised beds under a shade net for 5 to 7 days until its moisture content reaches 11-12%, after which it’s transferred to a warehouse for final homogenization and resting before transport.
