Grown on the volcanic slopes of Finca Colomba in El Salvador’s Santa Ana Department, this Bourbon variety is processed using a water-conscious semi-washed method. Producer Mario Valiente uses minimal water in fermentation and extends drying over raised beds for up to 20 days, developing deep sweetness and layered complexity in the cup.
Expect a creamy, full-bodied coffee with rich caramel and nougat sweetness, bright green apple acidity, and a delicate rose finish. It’s a cup that reflects both craft and care — and the shared belief that protecting water can help transform lives.
