Flavor Notes:

Brownie Brittle - Dark Toffee - Roasted Almond

Grown in a cool, lush tropical forest environment in the mountains of Puebla, this community lot showcases the rich, approachable, and complex character Mexican highlands are known for. This washed coffee is influenced by a particular microclimate and a later, slower ripening period—similar to the famous region of Coatepec in Veracruz—which concentrates the bean's sugars. We taste a deep, comforting foundation of chocolate and nuttiness, elevated by a delightful sweetness and a clean finish.

This coffee, known as Puhuac, comes from the Sierra Nororiental region, sourced from dedicated smallholder producers with an average farm size of 1–3 hectares. Communities like Zongozotla and Zapotitlan de Mendez have deep Totonaca and Nahuatl roots, proudly maintaining ancestral customs and language. The State of Puebla stands out for supporting producers with agronomic education, even providing collapsible raised drying beds with ventilated airflow systems to materially improve quality and consistency. We are proud to close the circle and bring these premium, traceable lots to market as these communities work towards organic certification.
