Flavor Notes:
Caramelized Green Apple • Dark Chocolate • Lime

WASHED CO-FERMENT | CANDY-LIKE SWEETNESS | BRIGHT CITRUS

This coffee comes from producer Jairo Arcila’s Santa Mónica farm in Quindío, Colombia. Made with the Castillo variety and processed with green apple and wine yeast, it brings a playful sweetness to our Roaster’s Reserve collection.

Think green-apple candy, balanced by dark chocolate and a bright lime finish. It’s an adventurous coffee with a familiar kind of sweetness—the sort that makes you pause after the first sip and go back for another.

Roaster’s Reserve: Curated by Marie Marsh

Our Roaster’s Reserve series is a limited collection personally selected and roasted by our head roaster, Marie Marsh. Each release comes with a song that adds another layer to the experience—a soundtrack for the feeling of the coffee.

The soundtrack for Green Apple:
“Tomorrow Never Knows” — The Beatles

Why Marie chose this song:

I chose this song because a coffee that doesn’t follow the status quo of what a “normal” coffee is supposed to be like deserves a song and band that did just that.

The studio experimentation in “Tomorrow Never Knows” challenged listeners to open their minds. Co-fermented coffees ask the coffee world to do the same. This coffee is bright, eccentric, in your face, but the sweetness is what keeps you hanging around.
