This is one of the cleanest Naturally processed coffees we have sourced, and the very first one we have brought in from Mexico.
When a coffee cherry is picked, we need to remove the skin and fruit of the cherry to get to the seed that we then roast. Farmers can use a wet mill to mechanically remove the fruit and skin. That is known as wet or washed process. The farmers can also use the heat of the sun to dry the cherries until the skin and fruit are brittle enough to remove. That process of drying is called NATURALLY PROCESSED, or DRY PROCESSED. Using the sun in this way leaves the cherries open to the elements a bit more, and traditionally this make the resulting coffees less consistent in size/density as well as having a higher natural sweetness in the cup.
BUT this coffee has the sweetness and still maintains a great consistency. All this results in a CLEAN cup without inconsistencies and a very playful and sweet flavor profile. It is so good.
